Set within a beautiful 25 acre farmland, Mavis's Kitchen & Cabins @ Mt Warning is located at the foot of Mount Warning in the lush Tweed Valley, less than an hours' drive from Surfers Paradise on the Gold Coast. With the relocation of Harley Street Brasserie restaurant to Mavis's Kitchen & Mavis's Cabins @ Mt Warning, the gorgeous Queenslander is now the new "Mavis's Kitchen". Mavis's Kitchen is named in honour of Charlie's mother, Mavis (pictured at right). Mavis's cooking skills are legendary and Charlie attributes his passion for food to his mother. At Mavis's Kitchen, we use fresh and organic produce to serve simple, home cooked and unpretentious dishes in this beautiful environment. Organic and RecycledAs well as providing the freshest, tastiest ingredients, our bio-dynamic organic garden, is also home to a worm farm and chooks (who also provide us with organic "happy" eggs for our dishes) to recycle kitchens greens and organic materials. This helps us to reduce our environmental impact by eliminating our landfill "green waste". Other produce and menu ingredients are sourced from local organic meat and vegetable farms, which results in less fuel used in transport, and you'll notice the taste difference too! Inside the restaurant we ask guests to select their meal from a blackboard menu. As we often change this daily, and almost always on a weekly basis anyway, depending on seasonal availability of ingredients, it also eliminates the need for multiple "hardcopy" menus to be rewritten. We make our own hand folded serviettes from recycled paper rolls (at least until we're able to source ready made serviettes made from recycled material - so if you know anyone ...) , and you can choose from recycled glass tumblers or standard wine glasses for your beverages. We continue to evaluate other energy efficiency and sustainable optons for implimentation, as they become available. On a property scale, we are remediating regrowth areas by removing "feral" plants like Lantana and Madiera Vine, and replanting with local native trees and shrubs, which already attract native birds and animals. |
